Zebda / Zebdah / Zebdya — Egypt's industry favourite for making mango juices, ice creams and numerous related products. The name comes from the Arabic zebda, "butter," and the flesh earns it: soft, melting, closer to a set custard than to fruit pulp.

Mango came to Egypt in the early 1800s, and Zebda is one of the seedling selections Egyptian growers made from those introductions — a native cultivar, now the country's leading local variety and its leading mango export to the Gulf.

The fruit is medium-sized and ovate, roughly 350-400 grams, with export grades above 350 g. It stays green even after ripening: smooth emerald skin turning dull yellow at ripeness, often staying light green when grown inland, and lightening to chartreuse at full ripeness — no blush, few visible lenticels. Inside, the flesh is deep orange, very soft and melting, almost fibreless, and sweet with low acidity and a floral, syrupy character shared with several other Egyptian varieties; Fairchild's tasters called it a sultry combination of melon and vanilla. At Amrakunja Nursery & Farms in West Bengal, India, it has been observed that Zebda has a unique, appealing salty aftertaste and is quite a rarity. Superb eaten fresh with a spoon, and the backbone of Egypt's vast fresh mango-juice trade. Harvested green, it holds good shelf life of about two weeks.

The seed is polyembryonic, so Zebda comes true from seed and serves as rootstock material, though grafting remains the route to early, uniform bearing. It is a mid-season variety, harvested late June/July in West Bengal, India, and late June through August in Egypt.

The tree is a semi-vigorous grower with a dense, spreading canopy that takes well to pruning. Its standout agronomic virtue — confirmed repeatedly in Egyptian trials at Sharqia and Ismailia — is strong resistance to mango malformation, alongside very good anthracnose resistance. Zebda can be adapted for kitchen garden, terrace garden, small orchard and rooftop garden.

Zebda is an out-and-out commercial variety. At the beginning of its harvest season, Zebda is sold as a table-purpose variety, and during the peak of its harvest season, it is sold to food processing industries for processing juices, making ice-creams and numerous related products.

In India, Zebda has the potential to address the problems faced by Totapari and Banganapally farmers in Andhra Pradesh and Karnataka.
